We also offer bulk ground beef at $7.50/lb (25lb min).

All of our beef is dry-aged for rich flavor and tenderness, and processed at a USDA-certified facility for safety and quality.

Finishing Options & Cuts:
If you order at 1/2 or full early, you’ll receive a cut sheet to fully customize your beef share — from steak thickness to roast sizes and ground beef packaging options. Our November beef is grass-fed and grass-finished. For December and January, you can choose grass-fed, grain-finished if you prefer.

* 1/4 orders will get the standard cut package (Details listed out below in FAQ section).

Deposit:
A 10% deposit is required to reserve your beef share. We’ll hold your payment and won’t process it until your animal goes in for processing.

Based in Pueblo / Colorado Springs — free delivery to most of the Front Range on orders over $300.

Our prices are based on hanging weight, which is the weight of the animal after harvest but before it's cut and packaged. This gives you the best value for the widest variety of cuts.

A Sample of What’s Included in Your Share:

  • Ground beef

  • Round steaks

  • A variety of roasts (chuck, arm, rump, etc.)

  • A variety of steaks (T-bone, ribeye, sirloin, etc.)

*Compared to grocery store beef, buying in bulk directly from a rancher offers a significantly better value, often saving you $2–$4 per pound while also giving you higher-quality meat and total control over your cuts.

That’s why we believe in keeping things simple, clear, and honest. From how your beef is raised to how it’s processed and priced, we’re committed to full transparency at every step.

Our goal is to help you feel confident, informed, and excited about filling your freezer with high-quality, locally raised beef.

  • Both types of beef come from cattle raised on pasture, but the finishing phase is what sets them apart.

    Grass-finished beef stays on pasture for its entire life and is finished on grass alone. This produces a leaner cut with a clean, natural flavor profile.

    Grain-finished beef is also raised on pasture but is finished with a mix of locally sourced hay and supplemental feed from Colorado Mills in the final 45 - 60 days. This results in beef that’s typically more marbled and has a richer flavor.

    No matter which finish you choose, you’re getting beef that’s raised with care and processed for quality.

  • We do not routinely administer antibiotics to our cattle. However, we firmly believe in responsible animal care, and if an animal gets sick or develops an infection, we believe it's most ethical to treat it.

    In these rare cases, the animal will be given a dose and held from slaughter until after the FDA-mandated withdrawal period, ensuring all antibiotics are fully cleared from their system

  • All of our beef is dry aged for a minimum of 25 days, which enhances both flavor and tenderness. During the dry aging process, natural enzymes break down the muscle tissue, creating beef that is more tender and flavorful.

  • For a ¼ beef (about 200 lbs of finished meat), you’ll need roughly 5–7 cubic feet of freezer space. A ½ beef will need about 8–10 cu. ft., and a whole beef will require 16–20 cu. ft.

    A small chest freezer is usually enough for a ¼ share.

  • Our beef is vacuum-sealed and labeled, so it’s easy to store in your freezer and stays fresh for up to 12–18 months.

  • When you reserve early, you'll receive a cut sheet to customize how your beef is processed.

    You’ll choose:

    • Steak thickness and number per package

    • Roast sizes or crockpot-ready portions

    • Ground beef packaging (1–2 lb packs)

    • Whether you want certain cuts as steak, roast, or ground

    • Extras like brisket, ribs, flank/skirt steak, stew meat, or offal

    • Optional add-ons: snack sticks & summer sausage (extra fee)

  • A quarter will include

    • Assortment of roasts

    • Assortment of steaks

    • ½ a brisket

    • The rest will be ground beef

    • Soup bones available on request
